Adapting Nadiya's "Time to Eat"

Howdy folks!
I'm a musician and mommy living in a wonderfully diverse neighborhood in queens, NYC. I have many dietary restrictions (vegan + gluten/soy/nightshade free) thanks to having Hashimoto's. My kids are dairy-free, and we're working towards our family being gluten-free, and eventually soy-free. I still cook meat for them...but now they are exposed to lots of veggies thanks to Mommy.
I'll be working my way through Nadiya Hussain's cookbook "Time to Eat" on this blog. I absolutely LOVED the BBC show when my family and I saw it on Netflix, and today (this was posted on July 8th originally), when my cookbook arrived in the mail, I knew I would adapt her recipes and storage tips to our family's needs. I don't know if anyone else out there would even be interested in this project, but I'm pretty stoked to be on this fun and educational food journey! I feel a "soul sister" kinship with Nadiya even though we've never met and most likely never will, so I guess this my way of connecting. :) Enjoy the blog! I'm going to have fun doing it!
